Ginger-Turmeric Salmon with Coconut-Cauliflower Mash

 

Step 1: Prep the Salmon

  • Rub 4 oz of wild-caught salmon with olive oil.

  • Season with sea salt, black pepper, fresh ginger, and turmeric.

  • Bake at 375°F for 12-15 minutes.

Step 2: Roast the Veggies

  • Slice fennel and zucchini.

  • Toss with olive oil, sea salt, and black pepper.

  • Roast at 375°F for 20-25 minutes.

Optional Sauce

  • Mix coconut yogurt, ginger, turmeric, and olive oil for a creamy drizzle.

Step 3: Coconut-Cauliflower Mash

  • Steam cauliflower florets until tender.

  • Blend with coconut yogurt, olive oil, sea salt, and ground flaxseed.
